
Here’s an easy, fun and yummy snack for your Shamrock Spectacular!
Ingredients:
- 1 18-oz box brownie mix, plus water, oil & eggs to make as directed
- 2/3 cup mint chocolate chips
- parchment paper to line pan
- 1/3 cup butter, softened
- 4 oz cream cheese, softened
- 1 Tbs milk
- 1/2 tsp mint extract
- green food coloring (optional*)
- 1/3 cup mint chocolate chips
- optional sprinkles
Prep Time: 20 minutes Bake Time: 33-36 minutes
Preheat oven to 350* and line a 9×9″ baking pan with parchment paper. Let the edges of paper go beyond pan by 1″ so you can lift the brownies out after baking. In a large bowl, mix brownie batter as directed on box. After mixing, fold in 2/3 cup mint chocolate chips. Pour batter evenly into prepared pan. Bake for 33-36 minutes, until toothpick inserted in center comes out almost clean. Cool brownies completely before frosting.
While brownies are cooling, make the frosting:
Blend the softened butter and cream cheese, then add the powdered sugar, milk, mint extract, and enough green food coloring for desired shade. (*My family does not eat artificial coloring, but I think white mint frosting is fine!) Mix until smooth. Spread frosting over brownies and sprinkle 1/3 cup mint chocolate chips over the frosting. If desired, sprinkle with sprinkles or decorating sugar. Cut into bars or squares and enjoy!
